Can I use a zener diode to force the output of a 25mhz crystal osc
from 5v to 3.3v?

A crystal osc shouldnt really have a voltage rating, so any 25mhz crystal should work at 3.3v or 5v .

The crystal is a "crystal oscillator", it has 4 pins?

And the other question is if it is permissible to short
circuit the osc' output, which is what clipping would
do? ....
